Before the blog, I was known for making super extravagant salads at lunch time. I would roast and saute veggies and make super yummy concoctions, while Tiara was sleeping. Once she woke up from her nap everything would be done and we would sit down and eat lunch together. Lately, I haven’t wanted to waste my free time making fancy salads, but I still love to eat salads and I hate to buy them pre -done, so this is my newest 2 minute lunch. I think it is really healthy and it really fills me up until dinner. Not a big fan of snacking but as you can see by the portion, which is all for me, I clearly like to eat. I am not one of those Newport women who enjoy starving themselves to squeeze into a size 26 jean. I would rather buy a much, much bigger size jean and be healthy. So here is my newest veggie burger salad recipe….
- one frozen Trader Joe’s veggie patty, or any brand you like
- 2 big handfuls of pre -washed mixed greens or arugula. I alternative every other day so I don’t get bored.
- crumbled feta or goat cheese. Love them both and use which ever I am most in the mood for.
- olive oil about 3 Tablespoons
- balsamic vinegar about 1 tablespoon
- pine-nuts or
- avocado
Put the patty in the microwave for 2 minutes. Throw the lettuce in a bowl, add the cheese, and add either avocado or pine nuts. I think it is too rich if you use them both together so I use which ever one I most feel like. Haven’t been using a lot of pine-nuts lately because they have gotten over the top expensive, but I love them so much. Add about 3 tablespoons of olive oil straight in the bowl and about 1 tablespoon of balsamic. Season with salt and pepper. Put in the veggie patty whole and toss everything with a pair of tongs and put back on the same plate you used to microwave the veggie patty. Only used one bowl and one plate. Easy clean up and the whole thing takes 2 minutes. The great thing is you could make this the night before and take it to work with you, just don’t add the dressing. Put the dressing in a Ziploc baggie and now you will have a super healthy and cheap lunch.
