Sometimes Louie and the girls fail to eat the bananas quick enough and they end up like this in my fruit and vegetable holder, disgusting. If I would have peeled them 2 days before I could have froze them and used them in smoothies but I was being really lazy and didn’t so now I have to make banana bread. My girls love banana bread and so do I, so I force my self to make the bread instead of throwing away the bananas even if I am feeling lazy and don’t feel like baking. This recipe is super easy and fairly healthy. Better than chips or a cookie, but not as healthy as a piece of fruit.
Banana Bread
- 1 cup of sugar
- 1/2 cup canola oil
- 2 teaspoons of vanilla extract
- 1 egg
- 2 very ripe bananas smashed with a fork
- 1 cup of whole wheat flour
- 1 cup of unbleached white flour
- 1 teaspoon of cinnamon
- 1 teaspoon of baking soda
- 1/2 teaspoon of sea salt
- 1/2 cup chocolate chips optional (my kids beg for the chocolate so I usually give in every other time.)
Heat oven to 350 degrees and grease loaf pan with cooking spray. In a mixing bowl cream the oil, sugar, egg, and vanilla until mixed. Add the bananas and mix until fairly smooth. Add the flour, salt, cinnamon and baking soda until all the flour is mixed in. Pour into loaf pan and bake for 45 minutes. The middle will be a little undercooked which makes the bread so much better. I pretty much under cook all my baked goods so if you like everything cooked thoroughly check the center with a toothpick and cook until it comes out clean.

You can also swap out the oil with 1/2-3/4 cup of unsweetened applesauce to lighten it up!
