kale fried rice

brown fried rice and kale

 

 

I originally saw this recipe in Gwyneth Paltrow’s cookbook but over time I have made a bunch of changes to make it my own. 
 
  • 8 ounce package of organic cleaned and chopped kale
  • 2 packages of frozen brown rice from Trader Joe’s ( each package is 10 oz)  I love using this rice, healthy and super easy!
  • about 10 baby carrots chopped
  • 1 yellow onion chopped
  • 1/2 cup soy sauce
  • 2 tablespoons of butter
  • 1 teaspoon of sesame oil
  • pepper to taste
 
Put about 1/4 cup of water in the bottom of a large saucepan.  Throw in the kale, put on a lid and let steam for about 8 minutes.  Stir occasionally.  Next remove the kale and put it in another bowl off to the side.  In the same saucepan add the butter and saute the onion and carrots together.  I usually saute for about 10 minutes or less, just until tender.  During the saute process, take two of the bags of frozen brown rice and put them in the microwave for 4 -5 minutes depending on your microwave.  Once the onions and carrots are done, open the bags of rice and put the rice into the pan.  Then add the kale, soy sauce and sesame oil.  Stir everything together and cook for about 2 more minutes.  Season to taste.  I don’t usually add any salt because the soy sauce is so salty, but I usually add pepper.  Viola, you are done! 
 
In the picture I have used one bag of brown rice and one bag of mixed rice medley as I only had 1 bag of brown left tonight when I threw this together.  I actually really liked the combination, so do whatever you want.  I never follow recipes exactly.  I eat this for my main course, since I am kinda of a veggie.  Tonight I baked some chicken thighs and drumsticks for the rest of the crew and added a salad and the whole dinner took 15 minutes to put together.  Super easy and tastes great.
