In the past I had a huge sweet tooth, well I actually still have it, I am just better at suppressing it in my old age.  In high school my lunch usually consisted of 3 cookies and a diet coke.  In my 20’s and 30’s I evolved to turkey, egg salad or tuna sandwiches with ice tea for lunch, followed by a cookie.  As my blood sugar along with my waistline increased through the years I transitioned to salads for most of my meals, accompanied by water.  I have developed into almost a freak health person at this point in my life.   I still have my vices, such as alcohol and of course the occasional cookie.  Clearly my weak spot.  Despite the weaknesses I pretty much live on a variety of vegetables and whole grains.  I throw in a little chicken  and fish once in a while, but I have actually love all my veggie concoctions more than anything else.  Shocking, never knew it could happen to me.  Much to the distress and dismay of my husband and children for whom I cook everyday,  I have developed a variety of personal recipes.  My newest which developed after my Vitamix purchase, is the green smoothie.

   Recipe for Green Smoothie

6 oz of unsweetened aloe vera juice (super great for everything internally)

3 slices of cucumber

1/2 apple

1 stalk of celery

2 handfuls of spinach leaves (pre -washed and cut from Trader Joe’s)

1 handful of kale (pre- washed and cut from Trader Joe’s)

juice from a whole lemon

                                                   Fresh grated  ginger

 I usually add about 8 0unces or as much as I need to get the consistency I want.  Blend it up and drink away. You can literally feel your body soaking in the nutrients.  I usually drink this after I exercise when I am hungry but not hungry enough for lunch.  Hope you enjoy .

P.S.  No one else in my family will actually drink my green smoothie except my sister.  If I want them to drink it I delete all the ingredients except the spinach and add coconut milk, a banana, blueberries and ice. You may want to start with this version.  Happy Monday!!!

    Yum! I am actually drinking my juice right now! Ginger, celery, apple, lemon, cucumber, carrot. You forgot about the donuts you used to eat 🙂

      I know, I did forget to mention the donuts. How I used to eat the whole box and wouldn’t eat anything else all day until the box was empty. miss you….

    Where do you get Aloe Vera Juice from?

      They actually sell a large container of it at Trader Joe’s and they have a bunch of different options at Mother’s and Whole Foods.
