I so wasn’t in the mood to write about anything in particular today but as I thought about skipping my post, my heart started racing and I got totally anxious. Clearly a sign I better just sit down and do it otherwise I will worry about it all night. and feel miserable when I wake up and realize I have nothing to post on Facebook. Ugh, that would be a sad start to my day.
Today I woke up and realized Lou had already gotten up. This doesn’t usually happen and I was praying he was making the coffee. Ever since I bought the new coffee maker he has yet to actually make the espresso. He hates the new machine and can’t figure out how to work it properly so he always goes to Starbucks after getting totally frustrated with the coffeemaker. I was hoping he figured it out today but as I exited the hallway I saw him walk in the front door. Guess he still didn’t figure it out? Who cares, I had my triple Vente Vanilla Latte right in my grubby hands the moment I left my bedroom, so I was happy. I didn’t even ask if he had any gift cards left because I didn’t want to start a fight. We generally have a rule that if we don’t have a gift card we don’t spend money at Starbucks. Well, truthfully that is my rule, definitely not his, even though he pretends for my sake he follows the rule.
Speaking of Starbucks card, I have to share the Mother’s Day card I received from Auntie Connie today, the queen of Starbucks cards. She is always sending us gift cards to Starbucks because she knows we love the coffee, don’t have extra money for the coffee and they always make us happy! Plus she helps her school by purchasing through the script program, which is a great way for her to justify spoiling us. She is a very special Auntie and is always doing nice things for us even though we don’t live close to one another. She was like a second Mom to Louie growing up, she took him everywhere. Anyways, she always sends super funny cards and today was one of my very favorites, so I have to share.
Is that funny or what?
I never had a chance to get to the market today because it is sooo hot here in Southern California. Sorry New York folks, heard it was still cold there. Tiara and I had a hard time getting into Target with the heat. It was like 90 degrees here and we don’t do well in the heat so we spent most of the day inside in the air conditioning.
When it was time to make dinner, I realized my choices were limited so I invented a brand new dish and surprisingly, it was good. So here is the chicken dish I threw together last night.
I took out a casserole dish, threw in a whole container of Trader Joe’s Bruschetta Sauce (the fresh one in the cold section), put some frozen chicken breasts on top, tossed them around in the sauce, added salt and pepper and put them in a 350 degree oven for 25 minutes. I ran out to get Trinity at gymnastics while it cooked and made a Caesar salad and some brown rice pasta when we got home. The whole meal took minutes to put together and the girls even liked it, well Tabitha didn’t try it so I can’t comment on her opinion, but the other two were happy.
We will see if Lou is a fan, he can be pickier than the girls sometimes. Now I need to get my butt off the computer and start cleaning up the sticky brown rice spread all over the floor.

Oh I love Trader’s Joe’s bruschetta and the meal sounded delicious and so easy to make. May need to try it one of these days. So thanks for sharing that here. And I know what you mean about posting. I am not posting on Sundays and have forced myself to do that, because I do need a break, but still sometimes it just feels like I am missing something. So, I can truly relate.
